The newly established adults-only MarBella Nido Suite Hotel and Villas on Corfu recently presented its new exclusive degustation menu for 2018, available at its Apaggio Restaurant and put together by Michelin-starred chefs Georgianna Hiliadaki and Nikos Roussos.
“The masterminds behind the Funky Gourmet restaurant in Athens, Georgianna and Nikos have put together a menu, which is showcasing traditional Greek dishes using the freshest ingredients, cutting-edge techniques and playful presentations, for the ultimate innovative fine-dining experience,” the hotel’s management said in a announcement.
Starting with a signature dish, the “Apaggio Dolmadaki” will replace the renowned rice roll with egg and lemon quinoa topped with a paper-thin crispy vine leaf. The “Agriolahana Salad” incorporates seasonal greens and charred baby gem with a basil pesto and cream cheese sauce.
Apaggio’s guests will also have the opportunity to taste the Corfiot Pastitsada with slow cooked chicken drumstick and grandma’s spiced secret sauce, and Lamb Tsilichourda, Corfu’s fricassee.
To round off the culinary journey, citrus curd will be served with orange meringues and kumquat sorbet. In addition, guests will enjoy a digestif from MarBella Nido’s carefully curated wine cellar, accompanied by Mignardises, the small bite-sized confectionery.
Designed by the two award-winning chefs, the degustation menu will be prepared by Nido’s culinary team, chefs Alexandros Kapsokavadis and Christos Alamanos.
Diners at Apaggio will also be able to enjoy additional traditional Corfiot dishes, from the a la carte style menu created by Nido’s culinary team, such as Sykomaida Tartar, beef entrecote prime cuts with Corfu’s fig delicacy, and the classic Corfiot fish soup, Bourdeto.
